This easy jack o’ lantern recipe is a fun spooky treat that will make your Halloween even more festive!
Jack O’ lantern pumpkin meringue cookies are a fun hit at Halloween parties.
They are easy to make!
You only need a few ingredients and a little time.
Jack O’ Lantern Pumpkin Recipe – Halloween Meringue Cookies
The jack o’lantern pumpkin meringue cookies are a fun and easy way to celebrate Halloween with your kids.
They are such an easy Halloween cookie to make, that kids can help.
My kids loved drawing the jack o’ lantern faces onto the pumpkin meringues.
Plus, these Halloween meringue cookies make the perfect Halloween treat for school!
Easy Jack O’ Lantern Pumpkin Meringue Cookies
These pumpkin meringue cookies are so easy to make.
The best part is they melt in your mouth just like marshmallows.
Now it’s time to gather all of your supplies and ingredients!
Supplies Needed:
electric mixer
baking sheet
parchment paper
icing bag
Ingredients:
3 egg whites separated from the yolk
1/2 cup of powdered sugar
1/2 tsp. pure vanilla abstract (optional)
Directions:
1. Preheat the oven to 225F and prepare all ingredients.
2. Line a baking sheet with parchment paper.
3. Add the egg whites into a mixing bowl and use an electric mixer on high speed for several minutes until the eggs are frothy.
4. Beat eggs on medium speed while gradually adding in the sugar.
5. Beat the eggs and sugar on high speed with your electric mixer until stiff peaks start to form.
6. Use a spatula to very gently fold in the vanilla and orange food coloring.
7. Gently transfer the meringue into an icing bag with a large round icing tip.
8. Pipe out 1-inch circles onto your lined baking sheet.
9. Bake for 1 hour.
10. Allow the pumpkin meringue cookies to completely cool before drawing on their jack o’lantern faces with the black food writer (This is the part the kids like to help with).
11. Store in an air-tight container.
Optional: For a more intense color, you can mix orange food coloring with 2 tbsp of milk and dip the top of each pumpkin meringue cookie in the mixture.
Let dry before adding the jack o’lantern faces.
